
Why Light Roast Espresso Makes No Sense (And How To Fix It)

Problem: Simultaneously sour and bitter espresso
- Light roasts are more hydrophobic, denser, and produce fewer fines than dark roasts.
- Dark roasts have more CO₂ and brittleness, creating higher puck resistance. → The conventional 9-bar method leads to uneven extraction with light beans: locally over-extracted (bitter) and mostly under-extracted (sour).
Solution: Abandon old systems, try new approaches
- Grind coarser: Start coarser than you think to avoid channeling.
- Longer ratio: Instead of 1:2, try 1:3 or 1:3.5 (e.g., 20 g coffee yielding 60-70 g espresso).
- Lower pressure: Accept that pressure often stays below 9 bar – flow rate becomes more important.
- Accept ugly shots: Light roasts produce less crema and can sputter. That's normal and not a sign of poor quality.
Practical tips
- Puck preparation: Less critical with coarse grinds; simple leveling often suffices.
- Time as a variable: The pump's flow rate matters more than extraction time. Adapt to your machine (e.g., 5 ml/s vs. 8 ml/s).
- Turbo shots: Short extraction times (approx. 11-15 seconds) can taste surprisingly good – give it a try!
