
Coffee Fermentation Explained!

All four are washed and dried identically after fermentation.
When Is Fermentation Finished?- Traditional: The toothpick test – when the mucilage is easily washed off (similar to a cake test).
- Modern: Fermentation also aims for flavor development. The soaking time after mucilage breakdown (at least 12 hours, often 100+ hours) allows flavors to infuse into the seed.
- Sensory test: The coffee beans sound like gravel when rubbed together.
- "Anaerobic": Redundant, since fermentation is inherently oxygen-free – even open tanks have oxygen displaced by CO2. The term is often misleadingly used for sealed containers.
- Co-Fermentation: Adding fruits (e.g., strawberries) brings additional sugar and microbes, not the direct fruit flavor.
- Infusion: Adding aromatic substances (e.g., cinnamon), which are often antimicrobial and alter the fermentation.
- Flavor crystals: Sometimes labeled as "co-ferment" but only artificial flavors are added – not a real fermentation process.
- After fermentation, the mucilage is washed off, and the parchment seed (with protective layer) is dried.
- Goal: Reduce moisture content from ~50% to 10.5% to prevent mold.
- Method: Dried on patios (concrete platforms) under shade nets to avoid heat damage.
