Origin & Processing:
- Northern Colombia, organic farm Fadera
- Natural processing with short fermentation (approx. 18 hrs) & gentle drum drying (Guardiolas)
- Unique transport: Sailed from Colombia to Bordeaux, then truck – 90% less CO₂ than container ships

Flavor Profile:
- Very sweet, like sugar syrup or aguardiente (light rum)
- Fruit notes: rhubarb, ripe papaya, citrus, cherry, passion fruit, hibiscus
- Complex acidity (malic, citric) – smooth and balanced
- Sweetness & complexity increase as it cools

Brewing Recipes (Espresso):
- Vibrating pump: 26–28 sec., ratio 1:2.1–1:2.2 – do not exceed 30 sec., otherwise flavors become dull
- Rotary pump: Slightly longer (up to 30 sec.) for perfect acid-sweet balance
- Flow profile: 9 sec. pre-infusion at 4 ml/s, total 29–32 sec., very fine grind (high puck resistance)
- Important: Let the coffee rest at least 3 weeks after roasting – then even sweeter & more harmonious
