This Natural Espresso replaces Doña Margarita and delivers a multi-layered flavor explosion.

  • Origin & Processing:

    • Northern Colombia, organic farm Fadera
    • Natural processing with short fermentation (approx. 18 hrs) & gentle drum drying (Guardiolas)
    • Unique transport: Sailed from Colombia to Bordeaux, then truck – 90% less CO₂ than container ships
  • Flavor Profile:

    • Very sweet, like sugar syrup or aguardiente (light rum)
    • Fruit notes: rhubarb, ripe papaya, citrus, cherry, passion fruit, hibiscus
    • Complex acidity (malic, citric) – smooth and balanced
    • Sweetness & complexity increase as it cools
  • Brewing Recipes (Espresso):

    • Vibrating pump: 26–28 sec., ratio 1:2.1–1:2.2 – do not exceed 30 sec., otherwise flavors become dull
    • Rotary pump: Slightly longer (up to 30 sec.) for perfect acid-sweet balance
    • Flow profile: 9 sec. pre-infusion at 4 ml/s, total 29–32 sec., very fine grind (high puck resistance)
