- Combine sugar and cocoa powder in a saucepan, add water, and stir over medium-low heat for about 2–3 minutes until smooth.
- Remove from heat just before simmering (when steam rises).

- Making an iced mocha with the sauce:
- Combine ¾ oz (about 22 ml) sauce, a double shot of espresso, and 4.5–5 oz (130–150 ml) milk in a cup.
- Froth with a handheld frother for about 15 seconds until volume increases by a third.
- Pour over ice and optionally dust with cocoa powder.
